Ingredients

2 tbsp olive oil
145g/5oz fresh spinach leaves
1 garlic clove, finely chopped
350ml/12fl oz vegetable stock
55ml/2fl oz double cream
freshly ground black pepper

Method

1. Heat the oil in a medium sauté pan.
2. Sauté the spinach until just wilted.
3. Stir in the garlic for 30 seconds.
4. In a liquidiser, blend the spinach with the stock and cream and season.
5. Serve.
