Cooking time 10 to 30 mins  
Ingredients

½ red onion, chopped
¼ squash, cut into wedges
2 garlic cloves
1 sprig thyme
1 chilli, sliced
salt and freshly ground black pepper
2 tbsp olive oil
water for blending (optional)

Method

1. Place the vegetables and flavourings in a roasting tin.
2. Season with salt and pepper and drizzle with olive oil.
3. Roast for 20 minutes.
4. When cooked, transfer into a blender and blend until smooth.
5. Add some water if necessary and serve.
