Rhubarb Crumble with Vanilla Custard

Ingredients

1 can of stewed rhubarb, drained of all but a third of liquid
50g/2oz stem ginger
50ml/2fl oz syrup
250g/9oz of luxury fruit and nut muesli
ready-made custard
vanilla pod

Method

1. Place the muesli on a baking tray and roast for 5-10 minutes until golden and warm, 180C/
350F/Gas 4.
2. Heat the rhubarb in a pan with the ginger and syrup.
3. Place in bowl and top with the crispy muesli.
4. To make the vanilla custard, mix the vanilla seeds into the ready-made custard and pour.
