Raspberry and white chocolate omelette

Ingredients

For the omelette
2 tbsp butter
50g/1¾oz raspberries
3 free-range egg yolks
2 tbsp sugar
4 tbsp double cream
3 free-range egg whites
3 tbsp icing sugar
4 tbsp white chocolate, melted
To garnish
25g/1oz pecan nuts, chopped
50ml/2fl oz whipped cream

Method

1. Preheat oven to 200C/400CF/Gas 6.
2. In a small oven-proof frying pan melt the butter. Add the raspberries, egg yolks, sugar and double cream.
3. Whisk the egg whites until soft peaks form, and fold this into the egg yolk mixture.
4. Dust with icing sugar, and pour over melted white chocolate.
5. Place frying pan into a preheated oven and cook for 5-6 minutes.
6. Take out of the pan and serve with chopped pecans and whipped cream.
