Plum porridge

Ingredients

For the porridge
150ml/5fl oz double cream
150ml/5fl oz milk
½ vanilla pod
2 tbsp caster sugar
2 cardamom pods, crushed
150g/5¼oz oats
For the plums
4 plums, halved, stones removed
50g/1¾oz almonds, toasted and chopped

Method

1. To make the porridge, heat the double cream, milk, vanilla pod, sugar and cardamom and let it infuse for 3-4 minutes.
2. Add the porridge oats and cook for 4-5 minutes.
3. For the plums, place the plums onto a hot griddle pan for 3-4 minutes. Serve on top of the porridge in a large bowl.
