Ingredients

3 egg yolks
125g/4½oz caster sugar
55g/2oz chocolate, grated
1 orange, zest only
250g/9oz ricotta cheese
splash of rum
55ml/2fl oz whipped cream
1/3 pineapple, sliced into rings

Method

1. Blend together the yolks and sugar.
2. Add the chocolate, orange zest, ricotta and rum and stir to combine.
3. Fold in the whipped cream.
4. Line a bowl with pineapple slices and spoon in the filling mixture.
5. Level off and turn the cheesecake out onto a serving plate.
6. Serve.
