Pasta in creamy mushroom sauce

Ingredients

For the pasta
225g/8oz plain flour
2 eggs
5-6 tbsp olive oil
For the sauce
1 clove garlic, crushed
2 tbsp olive oil
3-4 artichokes, roughly chopped
200ml/7fl oz double cream
1 tbsp parsley, chopped
salt
freshly ground black pepper
55g/2oz mushrooms, sliced

Method

1. For the pasta, blitz the flour and eggs in a food processor to breadcrumbs.
2. Drizzle in enough oil to form a stiff dough.
3. Roll out on a floured surface to 3mm thick.
4. Cut out bite sized shapes with cutters.
5. Blanch in plenty of boiling water until tender.
6. Drain.
7. Sauté the garlic in the oil for two minutes.
8. Add the mushrooms and sauté for two minutes.
9. Add all the other ingredients and simmer for two minutes.
10. Add the pasta to the sauce.
