Paprika mushrooms with Greek-style yoghurt

Ingredients

For the paprika mushrooms
2 tbsp butter
½ leek, finely chopped
6 mushrooms, thinly sliced
½ tsp chilli powder
1 tsp paprika
30ml/1fl oz white wine
30ml/1fl oz red wine
1 tbsp tomato sauce
1 tbsp tomato purée
To garnish
2 tbsp of Greek-style yoghurt
1 piece of toast

Method

1. To make the paprika mushrooms, in a medium sized pan melt the butter. Fry the leek for two minutes and turn down the heat to low.
2. Add the mushrooms and spices and cook for a further minute.
3. Add the white wine, red wine, tomato puree and sauce
4. Let it simmer for four minutes and add a little water if too thick.
5. To serve, place the paprika mushrooms in a bowl. Spoon over the Greek-style yoghurt and serve with toast.
