Ingredients

For the dressing
2 tbsp red wine vinegar
2 cherry tomatoes
2 tbsp olive oil
1 tbsp tomato purée
salt and freshly ground black pepper
For the salad
½ loaf bread
1 tbsp olive oil
75g/2½oz black olives, pitted
6 cherry tomatoes, halved
small handful of parsley, chopped

Method

1. Place all the dressing ingredients in a food processor and blend until combined.
2. Preheat the oven to 200C/400F/Gas 6.
3. Cut the bread into cubes, place on a baking tray, drizzle with oil and bake in the oven for 3-4 minutes.
4. Transfer the croutons to a salad bowl with the remaining ingredients, drizzle over the dressing and serve immediately.
