Ingredients

2 salmon fillets, skin on 1 packet bubble and squeak cakes or mash 1 jar chilli jelly or red pepper/chilli "jam" or dipping sauce butter and oil for frying
Method

1. Heat the oil and butter in a frying pan, add the salmon skin side down and fry until the skin is crisp. Turn the salmon over and fry until just cooked. 2. Meanwhile, heat the bubble and squeak cakes or mash according to the instructions on the packet. 3. To serve, place the bubble and squeak in the centre of the plate set the salmon on top and add a generous spoonful of the jelly, jam or dipping sauce.
