55g/2oz bulgar wheat 55g/2oz butter 55g/2oz self-raising flour 1 egg splash of milk 55g/2oz caster sugar 1 lime, juice only handful of mint leaves 55g/2oz caster sugar 1 orange, peeled and sliced drizzle of cream icing sugar, to dust
Method

1. Preheat the oven to 220C/425F/Gas 7. 2. Place the bulgar wheat, butter, flour, egg, milk, sugar, lime juice and mint into a food processor and blend together to make a batter. 3. Meanwhile, gently heat the sugar in a pan to caramelise and then add the orange slices. 4. Pour the batter on top of the caramelised oranges and then bake in the oven for 10-15 minutes or until golden and risen. 5. Remove from the oven and turn out onto a serving plate. Drizzle with cream and dust with icing sugar to serve.
