Ingredients

1 onion, sliced into rounds 50g/1¾oz plain flour 50g/1¾oz cornflour 50ml/1¾fl oz milk For the sauce 100g/3½oz caster sugar 1 orange, zest and juice only 1 tsp chives, chopped oil, for deep frying
Method

1. Heat the oil ready for deep frying. 2. Place the onion rings in the milk and then toss through a mixture of the two flours. 3. Deep-fry for 2-3 minutes or until crisp and golden. (CAUTION: Hot oil can be very dangerous. Do not leave unattended.) 4. Remove and drain on kitchen paper. 5. To make the sauce place the sugar in a pan and allow to caramelise on a high heat. When it reaches a dark mahogany colour add the orange juice and zest and take off the heat. Add the chives and serve.
