Ingredients

knob butter
½ banana shallot, peeled and sliced
55g/2oz mixed mushrooms, sliced
2 tbsp parsley, chopped
splash double cream
1 free-range egg

Method

1. Preheat the oven to 220C/425F/Gas 7.
2. Melt the butter in a pan and sauté the shallot for a few minutes to soften. Stir in the mushrooms and parsley and cook to soften.
3. Spoon the mixture into the base of a small gratin dish. Pour the cream on top.
4. Crack the egg over and then bake in the oven for 4-5 minutes, or until set. Serve.
