Ingredients
½ rock melon 1 orange, juice only 2 tbsp fresh mint 2 tbsp caster sugar 2 tbsp basil 1 handful ice I orange, segmented, to garnish
Method
1. For the soup, remove the seeds from the melon. 2. Remove the flesh from the melon, leaving the shell intact. The shell will become the soup bowl. 3. In a blender, add the melon flesh, orange juice, mint, sugar, basil and ice and blend for two minutes.
