Lime chilli swordfish with salsa and herby couscous tomatoes

Ingredients

For the lime chilli swordfish
1 lime, juice only
½ tsp of chilli flakes
1 tbsp honey
175g/6oz swordfish steak
For the salsa
1 tomato, finely chopped
2 tbsp fresh coriander, chopped
1 lime, juice and zest only
1 garlic clove, chopped
pinch of sugar
For the herby couscous tomatoes
1 tomato, cut in half
50g/1¾oz couscous, cooked according to packet instructions
1 tbsp chopped coriander

Method

1. To make the lime chilli swordfish, mix the chilli, lime and honey together in a bowl. Add the swordfish and marinate for 15 minutes.
2. Heat a griddle pan and cook the fish for 5-10 minutes, turning once.
3. For the salsa, mix together the chopped tomato, coriander, lime juice, garlic and sugar to taste.
4. For the herby couscous tomatoes, mix the couscous with the chopped coriander in a bowl. Divide the couscous between the two tomato halves and grill for 2-3 minutes.
5. Serve the swordfish with the salsa and the herby couscous tomatoes.
