Quick lamb 'tagine'

Ingredients

1 tbsp olive oil
½ onion, chopped
1 clove garlic, chopped
1 lamb steak, diced
50g/1¾oz dried apricots, chopped
pinch chilli flakes
½tsp paprika
½tsp cinnamon
1 tsp tomato purée
1 orange, juice only
splash white wine

Method

1. Heat the oil in a pan and gently fry the onions and garlic for 3-4 minutes until softened.
2. Add the lamb steak and fry for 2-3 minutes on each side until browned.
3. Add the apricots, chilli, paprika, cinnamon, tomato puree, orange juice and wine and cook for ten minutes. When sauce is reduced, syrupy and cooked through, serve.
