Haddock chowder

Ingredients

½ banana shallot, sliced
½ potato, diced
knob butter
½ vegetable stock cube
284ml/½ pint milk
100g/3½oz smoked haddock, sliced
50g/1¾oz sweetcorn
1 tsp parsley, chopped

Method

1. Gently sauté the shallot and potato in the butter for 2-3 minutes or until softened.
2. Add the stock cube and milk and cook gently for 10-15 minutes.
3. For the last two minutes of cooking time add the haddock slices and sweetcorn.
4. To serve, pour into a bowl and top with the parsley.
