Ingredients

30g/1oz caster sugar
pinch salt and freshly ground black pepper
handful fresh dill, chopped
1 lemon, zest and juice only
drizzle olive oil
1 fillet arctic char, sliced very thinly
4 tbsp olive oil
1 tsp Dijon mustard
salt and freshly ground black pepper

Method

1. Mix the sugar, seasoning, dill, lemon zest, lemon juice and olive oil in a bowl.
2. Arrange the arctic char slices on a serving plate.
3. Scatter the mix over the fish.
4. In a separate bowl, whisk the olive oil, mustard, salt and freshly ground black pepper to combine.
5. Drizzle the dressing over the char to serve.
