Grape clafoutis and vanilla custard

Ingredients

110g/4oz self-raising flour
1 tsp baking powder
30g/1oz icing sugar
½ pint milk
3 eggs, beaten
1 tbsp butter
handful of red grapes
For the custard
120ml/4fl oz milk
2 egg yolks
½ vanilla pod, split
2 tbsp caster sugar

Method

1. Preheat the oven to 220C/425F/Gas 7.
2. Place the flour, baking powder and icing sugar into a bowl. Whisk in the milk and eggs to make a thick batter.
3. Gently melt the butter in a non-stick frying pan. Sauté the grapes for a few minutes and then pour in the batter.
4. Transfer to the oven and cook for 10-12 minutes, or until risen and golden.
5. Meanwhile, to make the custard, heat the milk. Whisk the egg yolks, vanilla seeds and sugar in a bowl and then pour over the hot milk, whisking continuously. Return the custard to the pan and whisk until thickened.
6. Remove the grape pudding from the oven and turn out onto a serving plate.
7. Pour the custard over to serve.
