Fruit and nut pancakes

Ingredients

55g/2oz caster sugar
55g/2oz plain flour
1 egg
splash of milk
1 tsp baking powder
2 egg whites, whipped until they form stiff peaks
2 tbsp dried apricots, chopped
2 tbsp pistachios, chopped
drizzle of oil

Method

1. Whisk the sugar, flour, egg, milk and baking powder in a bowl.
2. Fold in the egg whites and then stir in the apricots and pistachios.
3. Heat a little oil in a non-stick frying pan. Spoon the mixture into the pan in batches and cook the pancakes for 2-3 minutes on each side until golden.
4. Transfer to a plate, and serve.
