Ingredients

2 eggs 4 tbsp milk pinch cinnamon 2 slices of bread 1 vanilla pod, split 85g/3oz caster sugar 55ml/2fl oz water 1 orange, juice only 4 apricots
Method

1. Whisk the eggs, milk and cinnamon together in a bowl. Dip the slices of bread with the mixture. 2. Heat a griddle pan until hot. Griddle the bread for 2-3 minutes on each side. 3. Heat the vanilla pod, caster sugar, water and orange juice in a medium-sized saucepan for a few minutes. Add the apricots and poach for 2-3 minutes. 4. Spoon the apricots and juices onto a plate and serve the French toasts alongside.
