Fennel and grape salad

Ingredients

1 fennel bulb, sliced thinly on mandolin
handful of grapes, cut in halves
handful of parsley, chopped
2 spring onions, diced
2 tbsp olive oil
½ lime, juice only
few cherry tomatoes
salt and freshly ground black pepper

Method

1. Place the fennel, grapes, parsley and spring onions in a bowl. Add olive oil, lime juice, cherry tomatoes and seasoning and toss together to coat.
2. Transfer the salad to a serving bowl and serve.
