Couscous with tomatoes

Ingredients

2 tbsp vegetable oil
handful ripe cherry tomatoes
½ aubergine, sliced
pinch chilli flakes
pinch sea salt
85g/3oz couscous
½ pint hot chicken stock (vegetarians could substitute vegetable stock)
handful spinach leaves
salt and freshly ground black pepper
squeeze lemon juice
30g/1¼oz pine nuts, toasted, to serve

Method

1. Heat the oil in a pan and fry the tomatoes with the aubergine slices for 2-3 minutes. Add the chilli flakes and salt and heat for a further few minutes, to soften.
2. Meanwhile, place the couscous into a large bowl and pour over the hot stock. Allow to cook according to packet instructions. Add the spinach, seasoning and lemon juice and fluff up the grains using a fork.
3. To serve, transfer the couscous to a serving plate and top with the tomatoes and aubergine slices. Sprinkle over the toasted pine nuts.
