Ingredients

½ corn on the cob, kernels only 150g/5¼oz self-raising flour 3 eggs, yolks and whites separated salt and freshly ground black pepper 25ml/1fl oz milk oil, for frying
Method

1. Mix the corn kernels, flour, egg yolks and milk together in a bowl and season. 2. In a clean bowl whisk the egg whites to form stiff peaks. Gently fold into the corn mixture. 3. Heat a little oil in a frying pan. Pour in tablespoon measures of the mixture to form individual round fritters. Fry for 1-2 minutes on each side. 4. Serve.
