Chorizo stew

Ingredients

1 tbsp olive oil
85g/3oz chorizo, sliced
85g/3oz kidney beans, drained
200g/7oz tinned cherry tomatoes
salt and freshly ground black pepper
handful of fresh herbs, including parsley and basil

Method

1. Heat the oil in a pan and gently sauté the chorizo for 1-2 minutes.
2. Stir in the beans, tomatoes and seasoning and simmer gently for 6-8 minutes.
3. Stir in the fresh herbs and heat for a further few minutes.
4. Remove from the heat and serve.
