Chorizo flatbreads

Ingredients

2 naan breads, sliced in half horizontally
olive oil, for frying
100g/3 ½oz chorizo, diced
½ can of cherry tomatoes
1 tbsp tomato puree
200g/7oz mixed beans
1 chillies, sliced
For the basil oil
Handful basil
85ml/3 fl oz olive oil

Method

1. Heat a griddle pan and griddle the naan breads.
2. Heat the oil in a frying pan and fry the chorizo for 4-5 minutes.
3. Add the tomatoes, tomato pureé and beans and cook for a further five minutes.
4. To make the basil oil, blend the basil and oil in a food processor until smooth.
5. Lay the naan bread on a plate and fill with the chorizo and bean stew. Top with basil oil and chillies.
