Cherry and cream pastry stack

Ingredients

200g/7oz ready-made puff pastry, rolled
4 tbsp icing sugar
110ml/4fl oz double cream
½ tin cherries, including juice
icing sugar, to dust

Method

1. Preheat the oven to 220C/425F/Gas 7.
2. Cut the pastry into a rectangular shape. Place on a baking sheet and dust with the icing sugar.
3. Bake in the oven for 8-10 minutes, or until golden.
4. Meanwhile, whisk the cream until thickened.
5. Remove the pastry from the oven and cut in half.
6. Place one half on a serving plate and spoon the cream on top.
7. Scatter the cherries on top and drizzle with a little juice.
8. Layer the remaining pastry on top. Dust with icing sugar and serve.
