Ingredients

For the pancake batter 5 tbsp plain flour 1 free-range egg 50ml/1¾fl oz milk vegetable oil For the caramelised bananas 1 tbsp butter 2 tbsp caster sugar 4 tbsp double cream 1 banana, cubed
Method

1. To make the pancakes, in a medium bowl mix the flour with the egg. Whisk in the milk to create a smooth batter. Add more milk if needed. 2. Heat a medium sized non-stick frying pan. Place a little oil in the pan. Cover the base of the pan with half the batter. 3. Turn over once golden. Repeat to make the pancakes. 4. For the caramelised bananas, in a medium sized frying pan on a medium heat melt the butter. 5. Add the sugar and cook for two minutes until golden. 6. Add the cream and banana and cook for one more minute. 7. Serve the pancakes on a plate and cover with the caramelised bananas.
