Apple, pear and sage sauce

Ingredients

40g/1½oz butter
350g/12oz Bramley apples, peeled, cored and cut into small chunks
350g/12oz ripe pears, peeled, cored and cut into small chunks
2 tsp caster sugar
50ml/2fl oz cider or apple juice
1 tbsp finely chopped sage leaves

Method

1. Place the butter, apples, pears, sugar and cider or apple juice in a saucepan and bring to a simmer. Cover with a lid and cook for about 10-15 minutes or until the fruits have softened and are beginning to puree. Remove from the heat and stir in the sage. The sauce can now be stirred briskly for a smoother texture or left fairly chunky.
