Apple fritters with ginger custard

Ingredients

For the Custard
2 egg yolks
55g/2oz caster sugar
½ pint milk
1-2 tbsp stem ginger, chopped
For the fritters
Vegetable oil, to deep fry
30g/1oz self raising flour
water
1 apple, peeled, cored and cut into wedges

Method

1. To make the custard, whisk together the egg yolks and the sugar. In a saucepan heat the milk then remove from the heat and pour, whicking constantly, onto the yolks and sugar. Put the mixture back into the pan and heat to thicken. Stir in the stem ginger.
2. To make the fritters, heat the oil in pan for a deep frying.
3. Place the flour in a bowl and mix in enough water to form a thick batter. Dip the apple wedges in the batter and then deep fry the apples for 2-3 minutes.
4. Carefully remove using a slotted spoon and drain on kitchen paper. Stack in two glasses and pour over custard to serve.
