Apple crumble with custard

Ingredients

30g/1¼oz butter
pinch cinnamon
1 tbsp brown sugar
2 apples, cored and diced
1 tbsp pecan nuts
1 orange, peeled and segmented
dash of white wine
250g/¾oz fresh ready-made custard
For the topping:
55g/2oz melted butter
1 tbsp caster sugar
150g/5¼oz gingernuts, blitzed to rough crumbs

Method

1. Heat the butter in a frying pan until foaming.
2. Add the cinnamon, sugar and apples and stir.
3. Add the nuts, orange and wine and simmer for 2-3 minutes.
4. Spoon this mixture into an ovenproof gratin dish.
5. Mix the melted butter, sugar and biscuit crumbs and spread across the top of the fruit.
6. Bake in the oven for 8-10 minutes.
7. Gently reheat the custard and serve the hot crumble with custard poured over. Eat at once.
