American-style bread with dressings

Ingredients

For the bread
6oz unsalted butter
1 tsp wholegrain mustard
170g/6oz plain flour
6 free-range eggs
1 courgette, grated
2 slices prosciutto
few strips roasted pepper, from jar
2-3 slices mozzarella
For the pepper dressing
85g/3oz roasted peppers
2 tbsp honey
drizzle olive oil
salt and freshly ground black pepper
For the herb and yoghurt dressing
handful fresh basil
handful fresh mint
½ lemon, juice only
½ tsp sesame seeds
1 garlic clove, peeled and crushed
salt and freshly ground black pepper
200g/7oz Greek-style yoghurt

Method

1. For the bread, blend the butter and mustard in a food processor. Add the flour and eggs and pulse to form a dough. Transfer to a large bowl.
2. Fold in the courgette, to combine. Transfer the mixture to an ovenproof dish.
3. Top with the prosciutto, pepper strips and mozzarella and microwave for 4-5 minutes, until golden and risen, and springy to the touch.
4. To make the pepper dressing, place all the ingredients into a mini-food processor and blend until smooth.
5. For the yoghurt and herb dressing, place all the ingredients into a mini-food processor and blend until smooth.
6. Transfer the dressings into separate serving dishes. Turn the bread onto a board and cut into wedges. Serve with the dressings.
