Prawns baked in sea salt with thyme prawn

Quick Recipe


Ingredients
12 raw prawns
500g/1lb 2oz rock salt
8 sprigs fresh thyme
lemon wedges, to serve


Method
1. Preheat the oven to 220C/425F/Gas 7.
2. Put a layer of rock salt about 1cm/½in thick on a small roasting tray, lay half of the thyme on to it then place the prawns on the herbs. Put the remaining thyme over the top of the prawns then completely bury in the remaining salt.
3. Sprinkle lightly with water then bake in a preheated oven for 6-7 minutes, crack the salt, remove the prawns and serve with lemon wedges.
