4 fresh squid tubes and tentacles, cleaned
6 large raw king prawns, cleaned
1½ red chillies, finely chopped
3 garlic cloves, crushed
large handful chopped coriander
3 pinches salt
1 mango (not too ripe), chopped
100ml/3½fl oz olive oil
handful unsalted cashew nuts, toasted
1. Clean the squid and the prawns under cold water. Chop the squid tentacles into bite-sized pieces and remove the black vein from the prawns.
2. Immerse the squid and prawns in separate pans of lightly simmering salted water.
3. Boil the squid about 2-3 minutes and the prawns for about two minutes. Drain well and leave to cool.
4. When the prawns and squid have cooled, cut the squid tubes into rings. Combine the squid and prawns with the other ingredients in a large bowl. Mix well and serve.
