Peppered steak beef steak

Quick Recipe


This recipe is for cooking on a barbecue.

Ingredients
4 steaks, (175-225g/6-8oz each)
an equal mixture of black, white, green and pink peppercorns
salt


Method
1. Season the steaks with salt. Place the peppercorns in a pepper mill. Grind very generously on to both sides of the steaks that you've previously seasoned with salt. Press the pepper on firmly, making sure it sticks to the meat during the cooking process.
2. When you're ready to eat, place the flavoured steaks on the barbecue over medium-hot coals. Cook for about 4 minutes each side for medium-rare, adding a couple of extra minutes to the cooking for a medium-to-well-done finish. Try not to prod or poke the steaks too much as you want to sear in the flavour, not lose the juices on to the hot coals.
