Pork curry pork chop

Serves 1

Preparation time less than 30 mins

Cooking time 10 to 30 mins

Quick Recipe


Ingredients
1 pork chop, bone removed, diced
2 tbsp olive oil
1 clove garlic, chopped
¼ potato, diced
½ red chilli, sliced
½ tsp mixed spice
2-3 cardamon pods
1 tsp curry powder
handful of peas
1 tomato, diced
120ml/4fl oz water
1 tbsp parsley, chopped


Method
1. Fry the pork in the oil until brown.
2. Add the garlic, potato and chilli and fry for 2-3 minutes.
3. Add the spices and curry powder and fry for one minute.
4. Add the tomato, peas and water and simmer for 4-5 minutes.
5. Stir in the parsley and serve.
