Quick Recipe

Ingredients
16 oysters
4 tbsp medium oatmeal
55g/2oz unsalted butter
1 lemon, cut into wedges
salt and freshly ground black pepper

Method
1. Carefully remove oysters from their shells. Lay them on a clean tea towel and allow excess liquid to run off.
2. Place the oatmeal on a large plate and season generously with salt and pepper. Gently roll the oysters in the oatmeal until they are lightly coated all over.
3. Melt the butter in a medium sauce pan and fry the oysters for about 1-2 minutes or until lightly golden on both sides.
4. Serve immediately with lemon wedges.
