Orange, potato and rocket salad
Ingredients
2 oranges, peeled and segmented
55g/2oz rocket
1 medium potato, peeled, diced and cooked
handful coriander leaves
1 mango, sliced thinly (optional)
For the dressing:
8 tbsp plum sauce
3 tbsp olive oil
seasoning
Method
1. Simply combine the salad ingredients well.
2. Mix the dressing ingredients together and spoon over the salad and serve.
