Ingredients
4 large slices wholemeal bread 55g/2oz low-fat soft cheese 1 medium eating apple, washed 1 tbsp lemon juice 200g/7oz can tuna in brine, drained 2 spring onions, trimmed and chopped 1 stick celery with leaves, washed, trimmed and chopped

Method
1. Spread the bread with the low-fat soft cheese. 2. Core the apple and chop finely, toss in the lemon juice and mix into the tuna with the spring onions and celery. Pile onto the bread and serve.
