For the burger
150g/5½oz minced beef
2 garlic cloves, chopped
1 tbsp chopped fresh parsley
salt and freshly ground black pepper
¼ yellow pepper, cut in half
1 tbsp olive oil
For the citrus salad
¼ yellow pepper, chopped
¼ courgette, chopped
1 tomato, seeds removed, chopped
½ red Thai chilli, finely chopped
½ orange, juice only
1 tbsp fresh basil leaves, torn
handful spinach leaves, to serve
1. For the burger, put all the burger ingredients except the pepper and oil into a bowl and mix thoroughly. Shape the mixture into a ball and then flatten it slightly with your hands to form a burger shape.
2. Brush a griddle pan with oil and heat over a high heat, then add the yellow pepper
and the burger. Cook the pepper and the burger for 5-6 minutes. Once the pepper is golden-brown, remove it from the pan. Turn the burger over and cook for a further 5-6 minutes, or until it is cooked through.
3. For the citrus salad, put all the salad ingredients (not the spinach) into a bowl and mix thoroughly to combine.
4. To serve, place the spinach leaves onto a plate, and spoon a helping of the citrus salad next to it. Sandwich the burger between the two pieces of pepper and place on top of the spinach.
