150ml/5fl oz Cava
2 mangoes
175g/6oz caster sugar
150ml/5fl oz water
1. Make a sugar syrup with the sugar and water.
2. Blend the mango in a blender and pass the purée through a sieve.
3. Return the purée to the blender and add the sugar syrup.
4. Pour the Cava into the blender with the mango purée and blend until smooth.
5. Pour into a container and transfer to the freezer for an hour, whisking every 20 minutes to stop crystals forming.
6. Scoop into martini glasses and serve immediately.
