2-3 leeks
450g/1lb frozen peas, defrosted
l lemon, zest and juice
clove garlic, mashed
oregano
olive oil
1. Cut the leek into chunks about 5cm/2 inches in length and blanch for about 5 minutes.
2. Drain well and allow to cool.
3. Tip the leeks into a mixing bowl and add the remaining ingredients. Mix well.
