Iced melon drink melon

Serves 2

Preparation time less than 30 mins

Cooking time no cooking required

Vegetarian Quick Recipe


Ingredients
½ melon, de-skinned and diced
1 orange, juice only
1 lime, juice only
splash white wine
handful ice
1 tbsp icing sugar
pinch ginger
few fresh sprigs mint
To serve
icing sugar, to dust
cubes of melon and mint sprigs (optional)


Method
1. Place the melon, orange juice, limejuice, white wine, ice, icing sugar, ginger and mint sprigs into a liquidiser.
2. Blend to a smooth consistency.
3. Transfer to tall glasses and serve dusted with icing sugar, and a cube of melon and mint skewered on to a cocktail stick.
