Ingredients
vegetable oil, for deep-frying 55g/2oz fontina cheese, grated 2 slices of ham, thinly sliced 1 tbsp of basil, chopped 3 sheets of filo pastry 1 egg, whisked salt freshly ground black pepper
Method
1. Heat a large pan a third filled with vegetable oil, for deep-frying. 2. Place the cheese, ham and basil into a bowl and mix together. 3. Brush each sheet of filo pastry with the egg and layer together. 4. Place the cheese mix in the centre of the pastry and scrunch up the sides to seal the mixture. 5. Deep-fry in the hot oil for 2-3 minutes, or until crisp and golden. 6. Remove with a slotted spoon and drain on kitchen paper. 7. Transfer to a plate, season and serve.
