Grilled T-bone steak with roasted shallots other

Quick Recipe


Ingredients
1 shallot, peeled, halved and drizzled with olive oil
1 T-bone steak, brushed with a little olive oil on both sides
1 tbsp olive oil
25g/1oz foie gras
1 tsp chopped fresh chervil


Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Place the shallot into a small roasting tin and place into the oven to roast for 15 minutes.
3. Heat a griddle pan until smoking. Add the T-bone steak and char-grill for three minutes on both sides, or until cooked to your liking. Remove from the heat and leave to rest for two minutes before serving.
4. Meanwhile, heat the olive oil in a frying pan over a high heat. When the pan is hot add the foie gras and sear for 30 seconds on both sides, or until browned on the outside and cooked to your liking.
5. To serve, place the T-bone steak on a medium-sized plate. Top with the seared foie gras and the roasted shallot and garnish with chervil.
