Green bean salad with polenta croutons polenta

Serves 1

Preparation time less than 30 mins

Cooking time 10 to 30 mins

Vegetarian Quick Recipe


Ingredients
140g/5oz green beans
2/3 red onion, peeled and sliced
1 lime, juice only
salt
freshly ground black pepper
1-2 tbsp olive oil
110g/5oz polenta, cooked
2 tbsp olive oil


Method
1. Trim the beans and blanche in boiling water for 4-5 minutes until tender.
2. Drain and stir in the red onion.
3. Add the lime juice, seasoning and oil and toss.
4. Once the polenta is made lay it out on an oiled plate about 1cm/0.5in thick and press to compress.
5. Place in the fridge for five minutes to harden.
6. Turn out and chop into croutons.
7. Pan fry for 3-4 minutes until golden and crisp.
8. Serve on the bean salad.
