Vegetarian Quick Recipe


Ingredients
1 tub soft goats' cheese
3 tbsp extra virgin olive oil
1 tsp wholegrain mustard
½ lemon, juice only
3 tbsp cider vinegar
1 tsp clear honey
1 bag of mixed salad leaves
shaved parmesan (optional)


Method
1. Whisk goats' cheese, oil, mustard, lemon juice, vinegar and the honey together and season to taste.
2. Toss the salad leaves in the dressing to coat evenly.
3. Place the salad on the plate and shave the parmesan over the top.
4. Serve with parma ham and salami with crusty bread.
