Gazpacho tomato

Serves 2

Vegetarian Quick Recipe


Ingredients
200g/7oz can, chopped tomato
½ shallot, peeled and finely chopped
½ green pepper, de-seeded and finely chopped
1 garlic clove, peeled and crushed
2 tbsp olive oil
2 tsp red wine vinegar
1 lime, juice only
handful basil leaves, chopped
handful parsley, chopped
To serve
sprig of chervil


Method
1. Process the tomatoes, shallot, pepper and garlic in food processor, then add the oil, vinegar and lime juice and process until smooth.
2. Place the mixture in a bowl and add the seasoning and fresh herbs.
3. Chill thoroughly in the fridge.
4. Remove and ladle the soup into bowls.
5. Serve with a sprig of chervil to finish.
