50g/1¾oz caster sugar
175g/6¼oz cherries, stemmed and stoned
4 tbsp lime juice
150ml/5¼fl oz tequila
3 tbsp cherry liqueur or Cointreau
275ml/10fl oz ice
1. Combine the sugar with three tablespoons of water and heat on a low heat until the sugar dissolves.
2. Remove from the heat and allow to cool.
3. Once cool, place the sugar in a blender with the cherries, lime juice, tequila, cherry liqueur or Cointreau, and the ice.
4. Blend until smooth, and serve in martini glasses with a sugared rim.
