juice and zest of two lemons
2 cloves garlic, crushed
1 x 400g/14oz tin butter beans
2 tbsp flat leaf parsley, chopped
4 tbsp olive oil
225g/8oz very fresh raw tuna loin
salt and freshly ground black pepper
crusty white bread, to serve
1. In a large bowl, mix together all the ingredients except the tuna.
2. Slice the tuna into thin slices and add to the marinade ingredients.
3. Cover the bowl and leave in the fridge for between 10 minutes to an hour.
4. Serve with crusty bread.
